Pumpkin salad with squid

Ingredients

Servings 4 servings
  • 300 g pumpkin pulp
  • 200 g squid
  • 3 sweet and sour apples
  • juice of half a lemon
  • 2 fresh cucumbers
  • 40-50 g shelled walnuts
  • 125 ml natural yoghurt
  • 1-2 tbsp. l. liquid honey
  • freshly ground black pepper
  • salt

Cooking

Step 1

Peel the pumpkin and cut into strips. Wash the squids, also cut into strips. Place the squid in one container, and the pumpkin in another, pour boiling water over so that the water only covers the food. Cover with lids and leave for 25-30 minutes.

Step 2

Wash the apples, cut into quarters, remove the core. Cut apples into strips, transfer to a dish with high sides. Sprinkle lightly with lemon juice. Stir, close the lid and let it brew.

Step 3

Remove rind from lemon. Chop the walnuts with a knife.

Step 4

Put chopped apples and cucumbers in a large dish. Add steamed squid and pumpkin, salt to taste. Mix. Mix yogurt, honey and remaining lemon juice in a mixer. Add zest and walnuts. Pour over the salad and mix.
