Pancake cake Drunk cherry in chocolate

Eh, walk so walk. With this spectacular cake with cherries, rum and chocolate, you can celebrate any day of Maslenitsa or simply prepare it for a family holiday. Just try and bake the thinnest and evenest pancakes for him.

Ingredients

Servings 8-10
  • 20–25 lightly sweet non-yeast pancakes with milk, 24 cm in diameter
  • 500 g frozen pitted cherries
  • 100 ml rum or cognac
  • 400 g bitter (70% cocoa) chocolate
  • 200 ml cream with 20% fat
  • 100 g butter
  • 100 g sugar
  • 1/4 tsp cinnamon or vanilla
  • whipped cream optional

Cooking

Step 1

Defrost the cherries and, draining the juice, soak in cognac or rum for 30–40 minutes. Leave some cherries for garnish.

Step 2

For ganache, heat the cream in a saucepan, melt the butter and chocolate in them, stirring constantly with a whisk, then add sugar in a thin stream. The ganache should be neither too runny nor too thick. You can, if desired, introduce juice from thawed cherries into it. Cool the ganache.

Step 3

Then spread in layers: pancake - chocolate ganache - pancake - chocolate ganache with cherries - pancake - chocolate ganache. And so on, until something ends first. Brush the top with ganache. Refrigerate for 3 hours. Garnish with cherries and, if desired, whipped cream.
