Paella vegetarian
Paella is a Spanish dish. In each region of Spain, it is prepared in its own way, most often with seafood, sometimes with meat. In this recipe, greens, asparagus, green peas and green beans are added instead of seafood and meat.
Ingredients
Servings 8-10 servings- 200 g fresh asparagus
- parsley (greens)
- 700 ml vegetable broth
- garlic - 2 cloves
- olive oil - 3 tbsp. l.
- 150 g green peas
- 200 g green beans
- 2 sweet peppers in different colors
- medium sized tomato
- onion - 1 onion
- a pinch of saffron
- 300 g rice
- salt
Cooking
Step 1
Soak saffron in 1 tbsp. l. water. Prepare onions, garlic, peppers and tomatoes as described in the main recipe. Wash and dry beans, peas and asparagus. Heat up a large skillet. Add 2 tbsp. l. olive oil, onion, garlic and sweet pepper. Fry, stirring occasionally, 4 minutes. Add remaining oil and rice. Mix quickly. Cook 2 min.
Step 2
Put the tomatoes and saffron into the pan along with the water in which it was soaked. Mix and simmer for 2 min. Pour in the vegetable broth, bring to a boil, reduce heat to medium and cook uncovered, without stirring, 12 minutes, until all liquid is absorbed.
Step 3
Add beans, cook 7 minutes. Add peas and asparagus; cook 4 more minutes. Remove from fire. Sprinkle with parsley, garnish with lemon slices.
