New potatoes with lemon mint dressing

Potatoes do not have a Balzac age: for us, they are either young or old, but still desirable. Today, the queen of the table is a young potato, even young, requiring a minimum of frills in cooking.

Ingredients

  • olive oil - 3 tbsp. l.
  • 2 tbsp. l. mint greens
  • garlic - 2 cloves
  • 1 kg new potatoes
  • 1 st. l. prepared coarse mustard
  • 2 tbsp. l. sour milk or yogurt
  • juice of 0.5 lemon

1. Wash the potatoes thoroughly, put in boiling salted water and boil until tender. * Young potatoes do not need to be peeled - it is enough to wash them with a brush under a strong stream of water. Young potato skin contains a large amount of substances useful for the body. 2. Prepare dressing. Peel the garlic, chop. Wash and chop the mint. Mix mustard, olive oil and curdled milk (yogurt). Add mint, garlic and lemon juice. Drizzle dressing over hot potatoes and serve immediately.
