Mediterranean burger
The combination of a bright green biscuit bun, a spicy patty and a rich nut sauce will not only cheer you up with aesthetic beauty, but also please you with its benefits for your figure and health.
Ingredients
Servings 4- 1 cup of sugar
- 1 tbsp. salt
- 1 cup flour
- 1 tbsp starch
- 4-5 eggs
- 1 tbsp lemon juice
- 250g frozen chopped spinach
- ground nutmeg on the tip of a knife
- 1 red onion
- 3 pcs. sweet peppers of different colors
- 1 bag of hamburger cheddar cheese
- 500 g beef pulp
- 200 g shallots
- 100 g cilantro
- dried basil, oregano, cumin, ginger, cinnamon, allspice, black pepper, wiga, chili pepper, salt to taste
- 10 g pumpkin seeds
- 10 g sesame seeds
- 10 g flax seeds
- 10 g sunflower seeds
- 100 g unroasted walnut kernels
- 1 ch.l. Teddy bear
- 1 tsp Dijon mustard
- 150 ml water
- ground black pepper to taste
Cooking
Step 1
Prepare a biscuit. Preheat oven to 190-200C. Grease a square mold with oil. Defrost spinach. Separate the whites from the yolks. Beat egg whites at the lowest speed of the mixer. Slowly, one tablespoon at a time, add the sugar, salt and nutmeg. (You can add 1 tablespoon of lemon juice). Beat egg whites to soft but firm peaks. Continuing to beat, add the egg yolks one at a time. Just whisk for 10-15 minutes. Sift in the flour and cornstarch and gently fold into the egg mixture with a spatula. Also gently add the spinach. Pour the finished dough into a mold, sprinkle with seeds and bake for 20-25 minutes. Turn the finished biscuit onto a wire rack and cool. Using a pastry ring, cut out "buns" from the biscuit and cut them lengthwise into two parts.
Step 2
For cutlets, prepare the minced meat by chopping the meat with a knife or turning it through a meat grinder. Chop the shallot very finely and cut down. Gently combine the minced meat, onions and herbs, season with spices to taste. Transfer the minced meat to a bag and beat it against the board with force several times so that the minced meat becomes plastic and does not fall apart when frying. Form cutlets weighing 150 g (you can use the culinary ring). Remove the formed cutlets in the refrigerator for 10-15 minutes, then fry in a grill pan.
Step 3
Prepare the sauce. Grind the nuts to a powder, gradually pour in half the water and add honey and mustard. Pour in some more water (look at the consistency, the sauce should not be too thin) and season with freshly ground black pepper.
Step 4
Collect a burger. Lubricate the lower part of the biscuit with sauce, put a cutlet on it, then sweet pepper cut into wide strips, onion half rings and a slice of cheese. Lightly brush the top of the biscuit with the sauce and cover the burger.
