Mat made of aged dough

The rug should not be confused with the rug. Kovriga is just round bread. The gingerbread is a big gingerbread. There are a great many options for preparing Russian gingerbread, as well as gingerbread. This recipe is one of the most unusual. Such a gingerbread is being prepared for a big holiday, and the dough for it is kneaded for a month. But in the end it turns out unusually tasty and fragrant. Such a delicious treat is worth the wait.

Ingredients

Servings 6-8
  • 1 kg rye flour
  • 500 g light honey
  • 1.5 cups sugar
  • 300 g of ghee
  • 3 eggs
  • 2.5 tsp baking powder
  • 1 glass of thick apple, plum or apricot jam
  • 10 cloves
  • 6 boxes of cardamom
  • 4 star anise
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ginger powder

Cooking

Step 1

Place honey, butter and sugar in a heavy-bottomed saucepan; bring to a boil over low heat, remove from heat, remove foam.

Step 2

Remove the seeds from the cardamom and place in a mortar. Put the cloves and chopped star anise, grind into powder. Add ground spices and stir. Powder the spices in a mortar and mortar and add to the hot mixture in the saucepan. When the mixture has cooled to 40 ° C, add all the remaining ingredients, except for the layer. Knead the dough for 20-30 minutes. Roll it into a ball, wrap tightly in cling film and refrigerate for 1 month.

Step 3

Then divide the dough into 2 equal parts, roll each into a rectangle, put on a baking sheet and bake in an oven preheated to 200 ° C until cooked (a wooden stick inserted into the dough should come out dry), about 15 minutes.

Step 4

Remove the finished casserole from the oven. Spread one part with jam, lay the second part on top. Lay a sheet of parchment or film on the mat, put a massive board or other load on top. In this form, leave the gingerbread for another 1 week.
