Marinated zucchini salad

  • 4-5 thin-skinned zucchini
  • sugar
  • lemon
  • vinegar with tarragon - 4 tbsp. l.
  • salt
  • 1 tsp coriander seed

Step 1

Wash the zucchini and, without peeling, cut into thin circles, scald with boiling water, dry. Cut the zest from the lemon, chop it; squeeze and strain the juice. Put the zucchini in a deep bowl. Add coriander seeds and lemon zest. Salt, pepper and drizzle with lemon juice. Heat sugar with a little water in a saucepan, as soon as it begins to caramelize, add vinegar and mix. Pour hot mixture over zucchini. Mix and leave to marinate for 2 hours. To serve, transfer to a salad bowl. With this salad, you can serve, for example, thin slices of dry-cured ham.
