Lamb skewers with cilantro and onions
For the perfect kebab, you only need two basic ingredients: a leg of lamb and fruit firewood. Fruit firewood gives the meat a subtle sweetish woody flavor. Cherry is best for lamb. A distinctive feature of this tree is a large amount of nutrients in the cells of the trunk and branches. Because of this, cherry firewood smokes a little and when burned, all these unique formations fill the smoke (and hence the meat) with a unique shade and smell.
Ingredients
- lamb legs 1 pc.
- onion 5 pcs.
- cilantro 1 bunch(s)
- salt 1 tbsp.
Cooking
Step 1
Marinate the meat a few hours before cooking. To do this, cut the flesh from the leg into small pieces. We cut the onion into rings, coarsely chop the cilantro. We spread in the pan in layers: meat, cilantro and onion. Salt.
Step 2
For coals, it is best to use firewood from fruit trees: cherry, plum or apricot.

Under no circumstances should ignition be used.
Step 4
While the coals are burning, we put the meat on skewers. We clean the cilantro from the meat, otherwise it will turn into coals. We put the pieces not tightly to each other, leaving gaps. Onions can be fried on a separate skewer
Step 5
Turn frequently to ensure the meat cooks evenly. We check the readiness with a knife. If the blood has stopped oozing from the incision, then the meat is ready.
