Ice cream "Caramel"
Fragrant ice cream with caramel flavor can be prepared by yourself at home. Everything is simple, but very tasty!
Ingredients
Servings 10- milk 330 ml
- cream 33% 200 ml
- cane sugar 40 g
- starch 10 g
- sugar 60 g
- dry cream 30 g
Cooking
Step 1
Melt cane sugar in a frying pan (over low heat). Carefully pour in 40 ml of hot milk. Stir with a whisk until the mass thickens.
Step 2
In a cup, mix starch, dry cream and 60 g of sugar. Pour warm milk in small portions, stirring with a whisk.
Step 3
Pour the mixture into a saucepan and put on fire. When it's hot, add the burnt sugar. Cook the mixture until it thickens (constantly stirring with a whisk). Then cool in an ice bath.
Step 4
Beat the chilled cream with a mixer until soft peaks. Pour the cooled caramel jelly into the whipped cream and beat again until smooth.
Step 5
Divide the finished ice cream into portion molds and place in the freezer. Ice cream can be served with grated chocolate or coconut flakes. Bon appetit!
