Grilled turkey drumstick with honey glaze
In order to cook a turkey drumstick on the grill, it must be well-fried. But how to cook an 8 cm thick drumstick without overcooking it?! I found an excellent way out of this problem in the traditional cooking of North American Indians - a grill board, a hardwood board soaked in water (beer or wine) for 2-10 hours beforehand. Thanks to the evaporated moisture, the food remains very juicy during baking, and then smoldering, the board saturates the food with smoke, while preventing it from burning and evenly distributing the heat from the coals.
Ingredients
Servings 3- turkey drumstick 800 g
- honey 2 tbsp. l.
- spices for chicken 2 tbsp. l.
- head of garlic 1 pc.
- sunflower oil 2 tbsp. l.
- coarse salt 1 tsp
- grill board 2 pcs.
Cooking
Step 1
Immerse the grill boards for 1-12 hours in water so that they are completely under water. Rinse the drumstick and pat dry with paper towels.
Step 2
Make deep punctures in the turkey with the tip of a knife and stuff with garlic cloves. If the cloves are large, they can be cut. Rub the drumstick with spices and salt and coat with a mixture of 1 tbsp. l. honey and 1 tbsp. l. oils. Wrap with cling film and leave to marinate in a cool place for 3-4 hours.
Step 3
Heat the coals of the grill to medium-high heat. To prevent excessive bending of the boards during cooking, place the grill board face down on the grill grate for 3-5 minutes until smoke comes out of the board. While the grill board is drying, place the drumstick on the tail of the grill next to the board and fry the turkey on both sides until brown, about 3 minutes each. from each side.
Step 4
After the grill board has dried on the front side, turn it over and put the grilled drumstick on top and bake for an hour, watching the heat of the coals, preventing the grill board from igniting with a spray of water or a bottle with a hole in the cap (the board should smolder, and do not burn!).
Step 5
For glaze, mix 1 tbsp. l. honey and 1 tbsp. l. oil, brush the turkey drumstick every 15-20 minutes.
Step 6
After 60 min. make 2 deep incisions in the thick part of the lower leg. Change the board (1 grill board (15 mm thick) smolders until it burns out about 60-80 minutes) and leave to bake for another 60-70 minutes, not forgetting to monitor the heat of the coals and prevent the board from catching fire.
