Pour milk in a thin stream, stirring constantly. Cook until thickened (the sauce should have the consistency of liquid semolina). Remove from heat, add salt, pepper, nutmeg and half of the grated cheese and leave for a while.

Toast the slices of bread in a toaster until golden brown and place on a baking sheet lightly greased with vegetable oil. Brush the bread with mustard and place cheese slices on top. Cover with ham and second slices of cheese.

Close with slices of bread. Spread béchamel sauce on top of sandwiches and sprinkle with remaining cheese. We put in an oven preheated to 205 degrees for 5 minutes.

After 5 minutes, move under the grill (another 3 minutes to brown the top of the sandwich. Serve for brunch, lunch, or even a "lazy dinner", preferably with a salad. Bon appétit!
