Cookies with dried apricots and yogurt

It is believed that " correct " coffee and " correct " tea are impossible without brown sugar - only brown sugar can emphasize the taste of the drink. And for sweet pastries, it is just perfect.

Ingredients

Servings 20
  • 1 cup chopped dried apricots
  • 1.5 cups flour
  • 1.5 tsp without baking powder
  • 1 tsp ground cinnamon
  • 0.5 cup instant oatmeal
  • 0.5 cup brown sugar
  • 1 st. l. almonds, sliced
  • 60–70 ml of O'KEY cherry/cherry or strawberry/strawberry yoghurt, 2.5% fat
  • 3 art. l. vegetable oil, plus for greasing the baking sheet

Cooking

Step 1

Cut the dried apricots into very small pieces. If the dried apricots are too dry, it must first be soaked in warm boiled water for 15-20 minutes, then discarded in a colander and allowed to drain all the water.

Step 2

Sift flour along with baking powder and cinnamon into a large bowl. Add oatmeal, sugar, dried apricots and nuts; mix.

Step 3

Beat yogurt with vegetable oil until smooth. Pour the resulting mixture into the flour and knead a dense dough.

Step 4

Divide the dough into 20 equal parts and roll them into small balls. Preheat oven to 190°C. Grease a baking sheet with vegetable oil. Put the balls on a baking sheet, use a fork to make cakes of the same size out of them.

Step 5

Sprinkle cookies with sugar. Put in the oven, bake for 20 minutes. Without shifting from the baking sheet, allow the cookies to cool.
