Classic ceviche with sea bass and sweet potato
Ingredients
Servings 1- seabass fillet - 120 g
- shallot garlic - 15 g
- red chili pepper - 7 g
- lime fresh - 120 g
- fresh ginger - 10 g
- garlic - 5 g
- milk 2% - 250 g
- fits - 10 g
- sweet corn - 5 g
- cilantro leaves for decoration - 3 g
- salt/pepper to taste
Cooking
Step 1
Mix milk, fresh ginger juice and fresh lime. Add finely chopped garlic and chili peppers (5 g), shallots, chopped into strips (10 g). Salt and pepper to taste. Let it brew for 2-3 hours.
Step 2
Cut the sea bass and sweet potato into cubes. Boil the sweet potato (20-25 min.). Mix fish and sweet potato with long-cut onion, corn and cut into small pieces cilantro and pepper, mix, pour dressing.
Step 3
Garnish with cilantro sprigs when serving.
