Chicken skewers with vegetables
By wrapping fillet pieces in bacon, you will always get a guaranteed result - a tender, juicy and very tasty chicken. I hope that your other half will be satisfied.
Ingredients
Servings 4- skinless chicken breast - 400 g
- Bulgarian red pepper - 1 pc.
- onion - 1 pc.
- medium carrot - 1 pc.
- garlic - 1 clove
- olive oil - 7 tbsp. l.
- lemon juice - 3 tbsp. l.
- curry powder - 1 tsp
- sliced bacon - 9 pcs. stripes
- salt and pepper to taste
- sugar - 4 tbsp. l.
- balsamic vinegar - 4 tbsp. l.
- olive oil for frying - 8 tbsp. l.
Cooking
Step 1
Wash the chicken fillet, dry well with a paper towel, remove excess fat and veins. Cut into small pieces.
Step 2
Squeeze out lemon juice.
Step 3
Prepare the barbecue marinade. Pass the garlic through a press, add curry powder, lemon juice and 8 tbsp. l. olive oil. Mix everything thoroughly.
Step 4
Pour the prepared fillet with marinade. Leave to marinate for 1 hour.
Step 5
Meanwhile, prepare the vegetables. Peel the carrots, cut into rings and boil in boiling water for 3-4 minutes, until half cooked.
Step 6
Free the bell pepper from the seeds and cut into pieces. Peel the onion and cut into rings.
Step 7
Transfer the meat to a paper towel and pat dry.
Step 8
Wrap each piece with bacon. On each skewer, chop 3 pieces of meat, alternating with vegetables.
Step 9
Salt and pepper on top. Fry the skewers in the remaining oil for 10 minutes. Periodically turning the kebab, pouring the remaining marinade.
Step 10
Prepare the sauce. Proportion 1:1 (balsamic vinegar + sugar). Put on a slow fire, stirring to evaporate the vinegar, you should get a thick mass, similar to caramel.
