Chicken broth with morels and black truffle

Even if you don’t have truffles on hand, which add a special flavor to any dish, this is no reason to refuse to cook delicious chicken broth with mushrooms.

Ingredients

  • chicken - 3 pcs.
  • water - 5 liters
  • onion - 200 g
  • carrots - 200 g
  • celery - 100 g
  • Morels - 15 g
  • butter - 30 g
  • truffle - 1 g
  • truffle oil - 3 g
  • salt - to taste
  • onion sibulet - for decoration

Cooking

Step 1

Place the chicken in a saucepan, cover with water, put on the stove. As soon as the water in the pan boils, reduce the heat and remove the foam formed on the surface of the water with a spoon. Take out the chicken and put in the next one. Repeat the procedure for removing the foam, then put the third chicken, also boil and remove the foam again.

Step 2

Fry the onion, carrot and celery in a frying pan without adding oil. Boil morels separately until tender. Add vegetables, morels and butter to the pan with chicken and continue to cook over low heat, salt.

Step 3

Before serving, sprinkle the broth on top with truffle oil and sprinkle with grated truffles. Garnish with chives.
