Baked pear with shrimps
Ingredients
Servings 4- 4 small pears, firm and ripe
- 8 slices gouda cheese
- 12 medium peeled raw shrimp
- 40 g butter
- 1 clove of garlic
- juice of 1 lemon
- 2-3 sprigs of cilantro
- extra virgin olive oil for serving
- salt, freshly ground black pepper
Cooking
Step 1
Pears cut in half. Remove the core with a spoon. On the opposite side, cut off some pulp so that the pear is stable. Drizzle the pears with half the lemon juice. Fry with 20 g of butter on both sides for 2 minutes. Transfer the pears to an ovenproof dish lined with baking paper.
Step 2
Cut the shrimp in half lengthwise, but not all the way through. Each shrimp should open like a "book". Fry with the remaining butter for 1-1.5 minutes. from each side.
Step 3
Finely chop 4 shrimp. Mix with garlic, passed through a press and remaining lemon juice. Spread the filling over the pears, pressing it into the recesses.
Step 4
Top with whole shrimp and a piece of cheese so that the shrimp tails are visible. Bake in the oven at 180°C for 7-10 minutes.
Step 5
Finely chop the cilantro and grind in a mortar with salt and pepper. Take out their oven form. Arrange the pears on plates, drizzle with olive oil and sprinkle with the spice mixture.
