Pepper, Garlic, Eggplant

Babaganush

A popular oriental dish, an appetizer consisting mainly of mashed cooked eggplant mixed with seasonings (eg, sesame paste, olive oil, lemon juice).

Ingredients

Servings kkl per 100 g
  • lemon juice - 2 tbsp. l.
  • salt to taste
  • olive oil 4 tbsp
  • 2 tbsp. l. minced garlic paste
  • 3 art. l. tahini (white sesame seeds, ground into a paste)
  • 3 eggplants

Cooking

Step 1

Lay eggplants brushed with olive oil on a baking sheet and bake for 20 minutes. in the oven at 200ºС.

Step 2

Allow to cool, remove the skin, chop the flesh and put in a bowl. Add 4 tbsp. l. olive oil, lemon juice, ground sesame seeds and garlic.

Step 3

Season to taste with salt and black pepper. Beat until a homogeneous mass is obtained.
