  • yellow sweet pepper - 100 g
  • red sweet pepper - 100 g
  • boiled beef tongue - 250 g
  • garlic - 8 g
  • onion - 40 g
  • red onion - 40 g
  • vegetable oil - 30 ml
  • condari - 4 years
  • chopped cilantro - 50 g
  • salt - 4 g
  • grated cheese (a mixture of Suluguni and Imereti) - 120 g
  • flour - 700 g + a little more for shaping khachapuri
  • fast-acting dry yeast - 7 g
  • salt - 7 g
  • butter - 50 g
  • vegetable oil - 50 ml
  • milk - 250 ml
  • drinking water - 200 ml

Cooking

Step 1

Prepare Adjarian khachapuri dough. Sift the flour through a fine sieve into a large bowl. Add salt and dry yeast, stir. Melt the butter and let it cool down a bit.

Step 2

Pour the melted butter, warm milk and water (both around 36°C) and 25 ml vegetable oil into the flour mixture. Knead thoroughly to make a soft dough that does not stick to your hands and bowl.

Step 3

Form a ball from the dough for khachapuri and grease its surface with the remaining vegetable oil. Cover with a towel and leave in a warm place for 30-40 minutes.

Step 4

Prepare the khachapuri filling. Sweet pepper and tongue cut into small cubes. Peel the garlic and onion, chop finely. In a deep frying pan, lightly fry the onion, pepper and tongue in vegetable oil (5 minutes over medium heat). Add kondari, cilantro, salt and garlic. Cook over low heat for 5 minutes.

Step 5

Heat the oven to 180°C. Put the dough on the work table, dusted with flour, and divide into 4-6 portions. Form "boats" and place on a baking sheet lined with baking paper. Place it in the oven. Bake for 20 minutes (until golden brown).

Step 6

Distribute the filling among the baked "boats", sprinkle with a mixture of cheeses. Place back in the oven. Bake for about 3-5 minutes to melt the cheese. Serve immediately.
