Vegetable stew with zucchini
Ingredients
- onion - 1 large onion
- carrots - 1 medium
- large zucchini - 1 pc.
- tomatoes - 2 medium
- potatoes - 4 large potatoes
- bell pepper - 1 large
- cabbage - 200 g
- a few peas of allspice
- bay leaf - 2 pcs.
- salt to taste
- water or meat broth - 200 ml
Cooking
Step 1
Make fried onions and carrots. Separately, fry the potatoes in a pan.
Step 2
Put the zucchini cut into small cubes in a saucepan. Add fried potatoes, fried carrots and onions, finely chopped tomatoes and julienned bell peppers. Scald chopped cabbage with boiling water. If the cabbage is winter, tough, it is better to pre-boil it in boiling water for 2-3 minutes. Salt to taste, if desired, add 1-2 tbsp. l. tomato paste.
Step 3
Add 2-3 bay leaves and a few peas of allspice. Pour in water or meat broth and simmer after boiling for 15-20 minutes. Very hearty and tasty stew. Great served with chicken cutlets with cheese.
