Vanilla madeleines

Follow the easy instructions and you'll be rewarded with your friends' ravings about amazing little biscuits - crispy on the outside and airy on the inside. The perfect accompaniment for afternoon tea. Take them to visit big and small girls.

Ingredients

  • wheat flour - 85 g
  • baking powder for dough - 3/4 tsp
  • salt - a pinch
  • sugar - 100 g
  • vanilla pod - 1 pc.
  • egg C0 - 2 pcs.
  • melted butter - 80 g
  • mold for madeleine and powdered sugar for sprinkling

Cooking

Step 1

In a small bowl sift flour, baking powder and salt.

Step 2

Scrape the seeds out of the vanilla pod and rub in the sugar. Do not throw away the pod, but put it in a small sealed jar of sugar - after a while you will get vanilla sugar.

Step 3

Beat eggs with sugar with a mixer until fluffy white foam. Pour in the oil, mix for a few turns of the mixer. Using a silicone spatula, fold in the flour.

Step 4

Put the dough in the refrigerator overnight.

Step 5

Preheat oven to 200°C. Grease a madeleine mold with a thin layer of butter. Fill shell molds almost completely with dough. Bake for 10-12 minutes (the first batch was like Madeleine in 10 minutes, the second in 12). A hump should appear and the edges should turn golden brown.

Step 6

Cool for a few minutes in the tin, then completely on a wire rack.
