Turkey Escalopes with Strawberry Wine Sauce

For many, this will be a revelation: turkey meat goes well with strawberries. After you prepare this dish, you yourself will be able to share this knowledge with others. Just decide which of the green salads to serve turkey escalopes with.

Ingredients

Servings 4
  • 4 turkey breast escalopes, 150-170 g each
  • 2 tbsp. olive oil
  • 16-20 strawberries
  • 200 ml white or rosé wine
  • 30 g butter
  • 2 tbsp sesame
  • salt to taste
  • coarse freshly ground black pepper to taste
  • Green salad for serving

Cooking

Step 1

Slightly repel the escalopes, leveling in thickness. Season with salt and pepper, brush with olive oil and leave at room temperature for 15-20 minutes.

Step 2

Strawberries free from sepals, cut into 2-4 parts, depending on the size of the berries.

Step 3

Heat up a non-stick frying pan. Add escalopes and cook over moderate heat, undisturbed, 3 to 4 minutes. Turn over and cook for 2-3 more minutes. Escalopes are ready as soon as they become matte throughout their thickness. Transfer to a plate, cover with foil.

Step 4

Pour the wine into the empty pan and scrape the bottom of the pan with a wooden spatula to lift the browned meat juices. Simmer the wine over low heat for 5 minutes. Add strawberries and boil for 2-3 minutes. Add the cold butter cut into chunks, stir with a whisk and season the sauce to taste with salt and black pepper.

Step 5

Serve the escalopes with a green salad, drizzling the sauce from the pan.
