Sweet and sour pork ribs

Ingredients

Servings 6–8
  • 1.5 kg pork ribs
  • 300 ml pineapple juice
  • 100 ml apple cider vinegar
  • 1 small onion
  • 2-3 garlic cloves
  • vegetable oil
  • 1 tsp allspice peas
  • salt, freshly ground black pepper
  • green mixed salad for serving

Cooking

Step 1

Cut the ribs into portions, season with salt and pepper, put in a ziplock bag, drizzle with vegetable oil, leave for at least 1 hour.

Step 2

Prepare the sauce: peel and chop the onion and garlic as finely as possible, put in a saucepan or frying pan, sprinkle with vegetable oil and simmer a little over low heat.

Step 3

Pour vinegar and pineapple juice into the onion, add allspice and 0.5 tsp. salt, bring to a boil, cook over low heat until the volume is reduced by 1/3.

Step 4

Kindle the coals in the brazier - they should burn out well and be covered with gray ash. Heat the grate, grease. Place the ribs on the wire rack and cook, turning once every 1 minute, 10 minutes.

Step 5

Take a silicone brush with a long handle and start to grease the ribs with sauce (a small amount so that it does not drip onto the coals). Fry the ribs for another 10-15 minutes, turning and brushing them about every 2 minutes. Serve hot with a green salad.
