Steam dumplings with cherries

When you see the word "dumplings", what filling comes to your mind first? Definitely cherry! Indeed, cherry dumplings are one of the symbols of Ukrainian cuisine. The most delicious dumplings with cherries are steamed. At the same time, the issue of leakage of the filling is solved: with this method, this simply does not happen. Unless you need to wash your fingers from cherry juice after removing the seeds, but this is easily done with lemon juice.

Ingredients

  • 400–480 g flour, plus more for rolling
  • 200 ml sour milk
  • 1 egg
  • 1 tsp baking powder
  • 2 Art. l. Sahara
  • salt
  • butter for greasing
  • 500–600 g cherries, can be s / s
  • sugar
  • butter
  • cream

Cooking

Step 1

For the dough, pour sour milk into a large bowl, add sugar and egg, mix.

Step 2

Gradually, in portions, begin to sift flour with salt and baking powder into a bowl with sour milk, kneading the dough. Knead the dough with your hands for about 10 minutes, as a result it should turn out soft, but elastic and not sticky to your hands.

Step 3

Cover the finished dough with a towel and let it rest at room temperature while you prepare the filling.

Step 4

For the filling, remove the pits from the cherries. If you don't have a pitting device, do it with the bent end of a hairpin or a straightened paperclip.

Step 5

When the cherry is prepared, separate small parts from the dough, roll them into sausages with a diameter of about 3 cm and cut them into circles 1–1.5 cm thick. Sprinkle the resulting pieces with flour so that they do not stick together, and cover with a towel so that they do not dry out.

Step 6

Roll out the pieces of dough into a circle with a diameter of about 9 cm. After rolling out 15-20 circles (they also need to be sprinkled with flour and it is better to keep them under a towel so that they do not dry out), start laying out the filling.

Step 7

Shake off excess flour from the dough and place about 6 cherries on each circle. Sprinkle with sugar and carefully pinch the dumpling. Put the finished dumplings on a floured board or tray and cover with a towel.

Step 8

If you don't have a double boiler, at the same time place a large pot half-filled with water over medium heat. Prepare a sieve that fits comfortably on this pan by lining it with cheesecloth.

Step 9

When all the dumplings are ready, put them in an oiled double boiler or in batches in a sieve, close the lid and cook for 15 minutes. every batch. Serve with sour cream, sugar and melted butter.
