Simple cheesecakes

These cheesecakes are really so simple that you can trust their preparation, for example, to a child of primary school age. And they are very soft too! Please note that we do not add too much flour to the dough and do not make sausage from the dough: we simply bread small portions of the curd dough in flour. Thanks to this, cheesecakes acquire a pronounced crust, but retain an almost creamy texture inside. They even look a bit like pancakes, which can play into the hands of mothers whose children eat cottage cheese very reluctantly.

Ingredients

  • raisins - 60 g
  • cottage cheese - 500 g
  • sugar - 60 g
  • eggs - 2 pcs.
  • flour - 3 tbsp. l. flour + 2-3 tbsp. l. for breading
  • vegetable oil for frying

Cooking

Step 1

Prepare raisins for simple cheesecakes. To do this, wash it and put it in a bowl. Pour hot water over and leave for 10 minutes. Then fold back on a sieve and let the liquid drain. Pat dry on paper towel.

Step 2

Prepare the dough for simple cheesecakes. Rub the cottage cheese through a fine sieve. If it is too wet, first lay it on a piece of gauze folded in four, lift its ends up and tie to make a "knot". Place under the press for 4-6 hours.

Step 3

Put the prepared cottage cheese in a large bowl. Add sugar and stir.

Step 4

Lightly beat the eggs with a whisk and pour into a bowl with cottage cheese. Mix thoroughly.

Step 5

Add the sifted flour to the curd mass and mix. Put in the raisins. Mix thoroughly again. Let the dough for cheesecakes “rest” a little (about 10 minutes at room temperature).

Step 6

Sift the remaining flour on the table. Gather cottage cheese dough for syrniki with wet hands in small portions and roll in flour. Leave the resulting "blanks" for 10 minutes, then roll again.

Step 7

In a large frying pan with a diameter of at least 26 cm, heat a small amount of vegetable oil. Lay out the prepared cheesecakes and fry on one side until golden brown.

Step 8

Turn the cheesecakes over with a spatula and fry on the other side. Then close the pan, reduce the heat. Keep the cheesecakes on the stove for another 5 minutes. It can be served on the table with sour cream or any sauce to taste.
