Sand cake with apricots

Plain and simple - it's all about our shortbread pie with apricots. But is it necessary to complicate something when we are given these sunny orange fruits, the meeting with which is a holiday in itself?! Therefore, we take the most affordable products that are in the refrigerator of every housewife, prepare dough from them, put them in a mold and distribute apricots on top. Sprinkle with powdered sugar and bake! It remains to wait about half an hour and reveal to the world a shortbread pie with apricots, delicious and so fragrant that you just want to break off at least a small piece ... But do not rush: this pastry is tastier when warm than hot. So be patient and then enjoy this delicious homemade pie to the fullest.

Ingredients

Servings 6-8
  • butter - 200 g + a little more for greasing the mold
  • semolina for preparing the form - 3 tbsp. l.
  • sugar - 200 g + 60 g for the filling
  • large eggs - 2 pcs.
  • flour - 320 g
  • corn or potato starch - 90 g
  • salt - on the tip of a knife
  • apricots - 400 g

Cooking

Step 1

Prepare the dough for the shortbread pie with apricots. Cut the butter into small cubes, place in a deep bowl and leave at room temperature for 30 minutes.

Step 2

Heat the oven to 180°C. Grease a baking sheet for shortcake with apricots with a little butter and sprinkle with semolina. Shake off the excess.

Step 3

Beat soft butter with a mixer with 200 g of sugar until a fluffy mass of a uniform consistency is obtained. Then add one egg at a time, beating thoroughly after each.

Step 4

On the resulting mass, sift through a frequent sieve flour with starch and salt. Quickly knead shortbread dough. Place on the prepared baking sheet and flatten with cold water-dipped hands.

Step 5

For the filling, wash and dry the apricots. Cut each in half and remove the pit. Lay the prepared apricots cut side up on the shortcrust pastry, pressing lightly. Sprinkle with sugar.

Step 6

Bake the shortcake with apricots for 20-25 minutes. Then take it out of the oven and let it cool down a bit. Transfer the apricot pie to a wire rack. Let cool until slightly warm and serve.
