Peppers stuffed with rice noodles and figs
This recipe has rather unexpected ingredients: figs, bacon, rice noodles, Adyghe cheese and spinach. However, it turns out pretty tasty.
Ingredients
Servings 4- rice noodles - 100 g
- bacon - 2 slices
- spinach s / m - 150 g
- onion - 1 pc.
- beautiful large pepper - 2 pcs.
- dried figs - 5 pcs.
- grated parmesan - 2 tbsp. l.
- Adyghe cheese - 30 g
- chicken broth - 4 tbsp. l.
- olive oil - 2 tbsp. l.
- salt pepper
- yogurt with paprika, greens for serving
Cooking
Step 1
In a small saucepan, fry the onion in olive oil, add the bacon, spinach, broth, salt and pepper. Close the lid and cook for 5-10 minutes.
Step 2
Cut the peppers along with the stalk, remove the seeds. Place in a large saucepan with a little water. Cook over low heat for 10 minutes.
Step 3
Boil noodles according to instructions. Add with finely chopped figs to a small saucepan. Crumble the Adyghe cheese there. Stir. Remove from heat and stuff peppers.
Step 4
Cook peppers for 5 more minutes. Sprinkle cooked peppers with parmesan. Serve with yogurt sprinkled with paprika and herbs. Enjoy your meal!
