Pasta with almonds, cherry tomatoes and basil
The sauce for this pasta is prepared in 5 minutes in a food processor, this is a very quick and tasty dish.
Ingredients
Servings 4- penne pasta 500 g
- Parmesan 40 g
- blanched almonds 100 g
- garlic 2 pcs.
- chili 1 pc.
- basil 1 bunch(s)
- cherry 450 g
- olive oil 2 tbsp
- salt, pepper 1 pinch(s)
Cooking
Step 1
Place pasta in boiling salted water and cook according to instructions until al dente. In a food processor with a knife attachment (or a blender), add: parmesan, almonds, garlic, chili and grind into crumbs. Add basil and 2/3 cherry tomatoes. Grind again. Splash some olive oil. Taste, season with salt and pepper if necessary.
Step 2
Cut the remaining cherry tomatoes into halves (or quarters). Save some water from cooking pasta, drain pasta in a colander and return to pot. Add sauce and water from cooking to have a delicate texture.
Step 3
Put the pasta on a plate and decorate with chopped cherry tomatoes and herbs. Enjoy your meal!
