No Bake Strawberry Cheesecake
No-Bake Strawberry Cheesecake can be a festive table decoration of the highest level. A real masterpiece of confectionery art! Ingredients
Servings 6-8- gelatin - 3 g
- strawberries - 200 g
- sugar - 80 g
- lemon juice - 1 tsp
- butter - 90 g
- shortbread cookies - 160 g
- gelatin - 5 g
- cream with a fat content of 35% - 250 ml
- cream cheese - 250 g
- sugar - 80 g
- natural yogurt - 200 ml
Cooking
Step 1
Make the no-bake strawberry cheesecake base. Cut the butter into cubes, place in a saucepan and melt over medium heat. Let it cool down a bit.
Step 2
Grind the shortbread cookies for the base of the cheesecake in a food processor or blender into fine crumbs. Pour in the melted butter and mix thoroughly with a spatula.
Step 3
Line the bottom of a 24cm springform pan with parchment paper. Put the resulting oily crumb on top and tamp with your palms or a glass. Cover the cheesecake base with plastic wrap and refrigerate.
Step 4
Make strawberry jelly for no-bake cheesecake. Gelatin pour 2 tbsp. l. water and leave for 10 minutes. Puree the strawberries in a blender until a smooth puree is obtained.
Step 5
Combine strawberry puree, sugar and lemon juice in a saucepan. Bring to a boil, then reduce heat to low. Add gelatin and stir until it dissolves. Remove from fire.
Step 6
Make no-bake Strawberry Cheesecake Cream Cheesecake. Gelatin pour 3 tbsp. l. water and leave for 10 minutes. Whip the cream with a mixer until soft peaks.
Step 7
In a separate bowl, beat cream cheese with sugar. Then alternately add natural yogurt and whipped cream. Dissolve the swollen gelatin, stirring, and pour through a strainer into the cheese mass. Whisk at low speed.
Step 8
Pour the resulting cheese cream onto the no-bake cheesecake base. Spread strawberry jelly on top. Then lightly mix the layers with the handle of a spoon to create a marble pattern. Place the cheesecake in the refrigerator for 4-5 hours.
