Mushroom biryani
Biryani is a very popular Indian dish made from rice with various additives. Like plov, biryani has a lot of varieties. It can be made with meat, chicken, shrimp, mushrooms.
Ingredients
Servings 4- softened butter - 25 g
- 80 g dried mushrooms
- a pinch of saffron
- 1 h. l. cardamom
- 1 sweet green pepper
- 250 g ready-made puff pastry
- 6 art. l. natural yogurt
- 2 tbsp. l. celery greens, mint and cilantro
- 1 star anise
- 1 cup basmati rice
- 1 st. l. dill seed
- For vegetable paste:
- 1 st. l. shelled sunflower seeds (or cumin)
- garlic - 2 cloves
Cooking
Step 1
Soak mushrooms in cold water for 1 hour. Soak saffron in 3 tbsp. l. water. Boil 2 cups of water along with anise, cardamom and dill seeds. Add rice and cook for 8 minutes. Remove from heat, cover with a lid and set aside. Grind all the herbs, garlic and pepper in a blender. Salt. Transfer to a saucepan, add yogurt and cook over low heat, stirring constantly, 6 minutes.
Step 2
Throw the mushrooms in a colander and fry in butter over high heat for 1 minute. Add vegetable paste and rice, salt and saffron infusion. Mix and pour into a baking dish.
Step 3
Preheat the oven to 200ºС. Roll out the dough into a circle, grease with butter. Cover with dough form with rice, sprinkle with seeds. Bake 20 min.
