Incredibly tender squid salad

Do you know that squid is a truly dietary and very healthy product? Calorie content in 100 g is only 122 kcal, protein is 21 g, and fats and carbohydrates are only 2 g each! Personally, I love calamari! I really envy people who live by the sea and have the opportunity to eat not ice cream, but freshly caught seafood! But the reality is that our squids are most often covered with a crust of ice, and so that after cooking they remain soft and tender, you need to work hard! But today I will tell you about the method of cooking, in which they turn out just melt in your mouth

Ingredients

  • Frozen squids - 5-6 carcasses
  • Eggs - 3 pcs
  • Lightly salted gherkins - 8 pcs
  • Salt - to taste
  • Green onions - small bunch
  • Sour cream 10% (can be replaced with mayonnaise) - 2-3 tbsp.

Cooking

Step 1

We take frozen squids and put them for 20 minutes in ice water. Not warm, not hot, cold. Thus, we get rid of large "icicles" without prejudice to the tender squid meat. In principle, you can simply defrost the carcasses in advance in the refrigerator, which I usually do. We boil water in a large saucepan, there should be a lot of water, the squid should not be "crowded". I take a 4-liter pan. We put salt - about 1/2 tbsp. We take out the squids from cold water (if they were not previously defrosted) and remove the ridges and entrails, do not touch the films. As the water boils, put prepared squids in it and spot exactly 5 minutes. 5 minutes not from the moment of boiling, namely from the moment the squids are immersed in boiling water.

Step 2

Time has passed. Drain the boiling water, pour the squids with cold water and rinse. Put the pot of water back on the stove. We begin to finally clean the squids: the films are already easily coming off. A new portion of water boiled, again put salt and our peeled squids and again detect 5 minutes from the moment of immersion. After 5 minutes, drain the boiling water, rinse the squids with cold water, sprinkle with a little lemon juice and put in an airtight container until use. Squids cooked in this way are unusually tender and soft.

Step 3

My favorite squid salad. We cut squid into strips, finely chop hard-boiled quail eggs, add fresh or pickled cucumber cut into small cubes and finely chopped green onions. For those who do not tremble from the terrible word "mayonnaise" - they dress the salad with it, but I use 10% sour cream (Valio) as a sauce, a little salt.
