Fruit salad with turkey and baked apple sauce

I want to share with you a recipe for a very unusual, bright, light and tasty salad, which I really like to cook in the summer! This salad is very harmonious in composition and it is ideally complemented by the sauce of baked apples with walnuts and honey that I invented. Ingredients

  • turkey fillet 400 g
  • ripe juicy nectarines 300 g
  • ripe hard cherries 200 g
  • large apples 3 pcs.
  • kiwi 2 pcs.
  • your favorite hard cheese 150 g
  • walnuts 150 g
  • milk 100 ml
  • soy sauce 6 tbsp. l.
  • honey 4 tbsp. l.
  • sesame 3 tbsp. l.
  • red bell pepper 1 pinch
  • ground black pepper 1 pinch
  • dried basil 1 pinch

Cooking

Step 1

We take a part of the turkey fillet equal to 400 g, rinse thoroughly with cold water and dry with paper towels. Then carefully cut the prepared fillet into small medallions.

Step 2

We prepare the marinade for our medallions: for this we dissolve honey in soy sauce and stir until smooth. We rub the prepared medallions with spices: we use red sweet pepper, black ground pepper, dried basil

Step 3

We place our medallions grated with spices in the marinade and let it brew and soak for 20-25 minutes.

Step 4

While our turkey fillet medallions are marinating, let's bake the apples for our salad dressing. We wash the apples in cold water, dry them, cut out the core. Cut each apple into 2 equal halves.

Step 5

Chop the walnuts with a knife. Lubricate each half of the apple with honey, sprinkle with chopped walnuts on top.

Step 6

We put our prepared apples to bake in an oven preheated to 180 degrees for 15-20 minutes until cooked.

Step 7

While our turkey fillet is marinating and the sauce apples are baking, prepare the rest of the sweet ingredients for our fruit salad. We cut the sweet cherry in half and carefully remove the stone, trying not to pinch or deform the berry itself.

Step 8

We cut ripe nectarines in half, remove the stone, and cut the halves into neat thin slices.

Step 9

Peel the kiwi and cut in half. Cut each half into neat thin slices. All our fruit ingredients are ready!

Step 10

We proceed to the main process in the preparation of our salad - we will prepare pickled turkey medallions. To do this, we remove our medallions from the marinade, put them on the board so that excess marinade drains from them.

Step 11

Next, in a preheated pan in a small amount of olive oil, fry our medallions from 2 sides for about 3 minutes until a golden crust forms. Then remove the medallions from the pan, sprinkle with sesame seeds. Let cool slightly and cut the medallions into thin, neat strips.

Step 12

We take our baked apples out of the oven.

Step 13

Let cool slightly and separate the apple pulp from the skins. We put the pulp in a separate bowl, collect melted honey and walnuts from the bottom of the apple baking dish with a spoon. Discard the apple skins.

Step 14

We combine the resulting honey-apple-nut mixture with milk and send it to a blender. Blend our ingredients until smooth. The sauce of baked apples, honey and walnuts for our salad is ready! Let's start assembling our salad:

On the plate on which you will serve the salad, carefully lay out the baked turkey fillet cut into strips.

Gently arrange the cherry halves on top.

Then we beautifully place slices of ripe nectarine.

Place kiwi slices on top.

On the largest grater, we rub your favorite hard cheese and sprinkle our salad on top of it.

Now we pour our salad with the prepared sauce of baked apples and sprinkle with the remnants of chopped walnuts
