Frozen creamy dessert with candied fruit
Ingredients
Servings 10 servings- egg whites - 4 pcs.
- raisins - 2 tbsp
- sugar - 100 g
- 100 g peeled hazelnuts
- 200 g different candied fruits
- 1 Art. l. orange peels
- 250 ml cream with 30% fat
Cooking
Step 1
Sprinkle a sheet of foil with water, cover with cling film, press down. Thanks to the water, the film will adhere well to the foil.
Step 2
Place the foil-foil sandwich in a rectangular or round tall dish, foil down, foil up. Press firmly against the mold walls and bottom. In this case, the edges of the "sandwich" should hang down by 8-10 cm.
Step 3
Rinse raisins, pour warm boiled water. Roast the nuts in a hot dry frying pan, crush into large crumbs. Cut candied fruit into small pieces. Whip the cream with a mixer at high speed until a stable but soft foam, 3 minutes, refrigerate. Pour sugar into a saucepan, pour in 40 ml of water and, stirring constantly, bring to a boil, 5 minutes.
Step 4
Beat egg whites with a mixer. Continuing to beat at the slowest speed, pour in the hot sugar syrup in a thin stream. Increase the speed and beat until the whites are stable on the whisk.
Step 5
Add whipped cream to the egg whites, mix gently with a spatula. Then add candied fruits, raisins, nuts and zest. Mix again.
Step 6
Transfer the mass to the prepared form, smooth the surface. Cover with the free edges of the film with foil and place in the freezer for at least 1 hour. Remove the frozen cassette from the mold, turn it over onto a dish, remove the foil and film. BTW: Sicilian cassata is one of the most popular desserts in Europe.
