Fried eggs on potatoes

Ingredients

Servings 4 servings
  • 600 g potatoes
  • vegetable oil - 3 tbsp.
  • egg - 4 pcs
  • salt
  • 1 st. l. curry powder

Cooking

Step 1

Peel the potatoes, cut into thin strips, rinse in water 2-3 times. Drain the potatoes in a colander, then place on a linen towel and dry thoroughly. Sprinkle curry powder over potatoes. Salt to taste, stir.

Step 2

Heat vegetable oil in a frying pan. Potatoes, without stirring, fry over medium heat, 7 minutes. Flip with two spatulas to the other side and remove from heat. Preheat oven to 200C. Using a pusher, make 4 symmetrically spaced recesses in the potatoes. Place the skillet in the oven for 6 minutes.

Step 3

Pour the eggs into the recesses, cover the pan with a lid and return to the oven for 5 minutes.
