Chicken rolls with bacon and pistachios
This appetizer has been included in our top traditional dishes for several years, first of all, for the New Year holidays. But it will fit into another holiday menu quite organically. Incredibly easy to make, yet not too heavy, insanely delicious, and quite satisfying, it's perfect even for snacking while waiting for a festive feast. Bacon spices up the chicken fillet and does not allow it to dry out, making the rolls incredibly juicy and appetizing. This time I decided to add chopped pistachios to the recipe ... and I did not lose!
Ingredients
Servings 8- chicken fillet - 800 g
- chicken egg - 2 pcs.
- smoked bacon in slices - 500 g
- ground black pepper - to taste
- dried oregano - to taste
- pistachios, peeled - 5 tbsp. l.
- chopped parsley - 3 tbsp. l.
Cooking
Step 1
Defrost chicken fillet on the bottom shelf of the refrigerator the night before cooking in a deep bowl (if it was frozen). Also be sure to check for toothpicks or small wooden skewers at home - you can't do without them in this dish! Peel the pistachios if they are in the shell, or just take them out of the bag if they are already peeled and chop them coarsely. Leave 1 tbsp. l. for decoration.
Step 2
In a deep plate, shake 2 chicken eggs with a fork, add chopped pistachios, freshly ground black pepper, chopped parsley, oregano or any other seasonings to your taste, mix well.
Step 3
Cut the chicken fillet in the form of a book, take a small amount of the egg mixture with your fingers (it is much more convenient than cutlery) and pour it into the middle of the “book”, then roll it into a roll, wrap it with a strip of bacon, and secure with a toothpick. Do the same for all other rolls. At first it will seem that this is almost impossible, since the fillet is quite slippery, and the egg mixture constantly flows out. But then it turns out that this is not difficult at all: just try to hold the mixture inside the roll with your fingers.
Step 4
Preheat the oven to 220 ° C, put the rolls in the form, bake for 15 minutes, check for readiness by piercing with a toothpick (if the juice is light or not at all, then it is ready), if necessary, bake for 10 minutes, each time checking readiness.
Step 5
Remove from the oven, remove the toothpicks - the rolls have taken shape and will not fall apart. Serve hot or warm as an appetizer. And one more thing about pistachios) If you like roasted nuts, then you can immediately sprinkle the rolls before baking, if not, then sprinkle before serving or 5 minutes before the end of baking.
