Cheesecakes with cottage cheese

Cheesecakes with cottage cheese - homemade pastries, cozy, sincere. Therefore, it is necessary to tune in to its preparation in a special way. Experienced housewives know that yeast dough literally “feels” the state of the one who deals with it. Perhaps it's all about more careful measuring of the ingredients, measured hand movements or special patience when kneading ... Scientifically, of course, this is not justified in any way, but still try to achieve, if not zen, then at least simply mental balance. We are sure that everything will work out for you in the best way!

Ingredients

Servings 10 pieces.
  • dark raisins - 50 g
  • cottage cheese - 200 g
  • vanilla sugar - 1 tsp
  • eggs - 1 pc.
  • muka - 1 h. l.
  • sugar - 1.5 tbsp. l.
  • salt - on the tip of a knife
  • butter - 50 g
  • milk - 130 ml
  • sugar - 100 g

  • dry yeast - 10 g
  • eggs - 2 pcs.
  • flour - 400 g + a little more for cutting dough

Cooking

Step 1

Prepare the dough for cheesecakes with cottage cheese. Cut the butter into small cubes, place in a saucepan and melt over low heat. Let it cool down a bit.

Step 2

Heat the milk for the cheesecake dough and dissolve the sugar and salt in it. Add dry yeast, stir and leave for 10 minutes to activate. Add flour.

Step 3

Pour the melted butter into the flour mixture, beaten until smooth 1 egg and knead thoroughly with your hands or in a food processor, installing special nozzles in it. The dough should have a uniform consistency and easily separate from the walls of the container.

Step 4

Cover the dough for cheesecakes with a clean towel and leave in a warm place for 2-2.5 hours. It should increase in volume at least 2 times. Then punch down the dough and let it rise again (1 hour).

Step 5

While the dough is rising, prepare the stuffing for the cheesecakes. Rinse the raisins and soak in warm water. Leave for 20 minutes, then fold on a sieve and rinse again with running water.

Step 6

Rub cottage cheese for cheesecakes through a fine sieve. Mix with regular and vanilla sugar, 1 egg and flour. If desired, you can add a little honey to the filling. Add prepared raisins and stir.

Step 7

Put the dough for cheesecakes on a table dusted with flour. Divide it into small pieces and shape them into balls. Leave for 10 minutes at room temperature.

Step 8

Place the balls on a baking sheet lined with baking paper, 3 cm apart. In the middle of each, make a depression with the bottom of the glass. Fill them with cottage cheese filling, sprinkle with sugar. Leave for 20 minutes.

Step 9

Heat the oven to 180°C. Lubricate the cheesecakes with cottage cheese with a lightly beaten remaining egg with a culinary brush. Bake in preheated oven for 25-30 minutes. or until ready.
