Cake without baking with strawberries

Here is a delicious cake that you can prepare in less than half an hour. With this recipe, no guests will take you by surprise.

Ingredients

Servings 6–8
  • 500 g to the strawberries
  • 250 g cream cheese
  • 200 ml heavy cream
  • 3–4 tbsp. l. powdered sugar
  • 1 st. l. lemon juice
  • 1/2 tsp vanilla extract
  • 3 art. l. strawberry jam (no berries)
  • 250 g shortbread cookies
  • 150 g butter

Cooking

Step 1

For the base, melt the butter. Grind cookies in a food processor to fine crumbs, add butter and mix. Pour into a 22 cm diameter mold and tamp down with a glass. Cover with cling film and place in the freezer for 15 minutes.

Step 2

Using an electric mixer, beat cream cheese with powdered sugar, vanilla extract and lemon juice.

Step 3

In another bowl, whip the cream to soft peaks. Gently mix cream cheese and cream together with a spatula.

Step 4

Cut strawberries into 4 pieces. Warm the jam a little and mix with the berries.

Step 5

Remove the cake base from the freezer and fill with cream filling. Then lay out the berries. Serve immediately or refrigerate for 2-3 hours.
