Braised young cabbage
Ingredients
Servings 4- 1 head of young white cabbage (1.5 kg)
- 200 g bacon
- 200-250 ml vegetable or chicken broth
- a pinch of powdered sugar
- white wine vinegar
- vegetable oil
- salt
Cooking
Step 1
Heat oil over medium heat in a high sided skillet. Cut the bacon into small pieces. Fry, stirring, 2 minutes. Add sugar and a couple of drops of vinegar.
Step 2
During this time, chop the cabbage. Add to bacon, stir and cook for 2-3 more minutes.
Step 3
Reduce the fire. Add broth. Salt. Simmer another 10 min. until the cabbage is soft. At the same time, it should remain slightly crispy. Don't digest it!
