Pork baked in the oven
Oven-baked pork is the perfect hot dish for a festive table. It does not require special attention (it spends more than 4.5 hours in splendid isolation!), but it almost always turns out great. The quality of the raw materials in this case is of decisive importance: buy chilled meat, no frozen! Spices and spices for pickling can be varied depending on your taste preferences, but we do not recommend giving up juniper and coriander, as they give the dish a very interesting “sound”. By the way, while the pork is being baked in the oven, your loved ones and guests at home will be fascinated by the magical aromas coming from the kitchen, and by the time they are served, their appetite will be at its peak!
Ingredients
Servings 10- loin of pork - 2 kg
- garlic - 6-7 cloves
- ground sweet paprika - 1/3 tsp
- dried juniper - 4 berries
- dried rosemary - 1/3 tsp
- carnation - 2 buttons
- Coriander – 1/2 tsp. l.
- chili flakes - 1/2 tsp
- olive oil - 1 tbsp. l.
- salt, freshly ground pepper - to taste
Cooking
Step 1
Prepare pork for roasting. Wash it and pat dry with paper towels. Peel the garlic cloves. Cut the large ones into long slices, leave the small ones whole.
Step 2
Prepare the spice mix for the pork. Place sweet paprika, juniper, rosemary, cloves, coriander, and chilli flakes in a mortar. Rub with a pestle. Add oil and stir.
Step 3
Put the pork on the table. With a thin knife, make deep punctures in the meat. Insert half of the garlic cloves into them. Flip the meat to the other side and stuff with the remaining garlic.
Step 4
Rub the pork with salt, then brush all over with the spicy butter mixture. Wrap in cling film and leave at room temperature for 1-1.5 hours.
Step 5
Heat the oven to 200°C. Remove the cling film from the pork and wrap the meat in foil. Put on a baking sheet and bake for 3.5-4 hours. Serve hot on the table.
