Cookies Homentashen
Homentashen is a traditional treat served on the Jewish holiday of Purim. The filling can be different, I wanted with poppy seeds. Very tasty cookies! Shortcrust pastry and a lot of poppy seeds, that's something!
Ingredients
Servings 22 pcs- 200 g poppy
- 200 ml milk
- 100 g sugar
- peel of 1 orange
- 125 g soft butter
- 100 g sugar
- 10 g vanilla sugar
- 1 egg
- 2 Art. l. milk
- 250 g sifted flour
- 5 g baking powder
Cooking
Step 1
Beat soft butter + sugar + vanilla sugar, add egg, milk, mix everything and add flour mixed with baking powder. Quickly knead the soft elastic dough (flour may take a little more). Wrap the dough in cling film and refrigerate for 1 hour.
Step 2
In the meantime, prepare the filling. Grind the poppy seeds in a coffee grinder (not very finely). Pour milk into a saucepan, add sugar and poppy seeds. Cook until the liquid evaporates for 10-15 minutes (stirring constantly, when the poppy becomes thicker, it will gurgle). Add the zest to the finished filling and let it cool completely.
Step 3
We cut out circles of 8 cm from the dough, apply the filling (1 tsp with a slide) and form triangles, they need to be pinched higher, because they diverge when baking. I got 22 pcs. and there was just enough stuffing for this amount. I greased (yolk + 2 tbsp milk) and sprinkled with brown sugar.
Step 4
Bake at 180 degrees until lightly browned. Happy tea!
