Yin Yang Cake
My best friend's daughter has a birthday. I wanted to surprise everyone. A lot of ideas were spinning in my head, in the end I decided to cook two different cakes in one. I baked 2 biscuits, in the second I added 5% soft cottage cheese to make the taste different. Instead of cottage cheese, you can add a few tablespoons of cocoa (remove the same number of tablespoons of flour) so that the second biscuit turns out to be chocolate.
Ingredients

- creamy little - 80 g
- eggs - 4 pcs. + 3 yolks
- sugar - 250 g
- vanilla sugar - 2 tsp
- baking powder - 1 tsp
- curd cheese - 200 g
- cream 33-35% - 100 ml
- powdered sugar - 3 tbsp. l.
- canned peaches - 1 can
- cream 33-35% - 250 ml
- lozenge or marshmallow - 200 g
- frozen strawberries - 200 g
Cooking
Step 1
Cooking biscuit. In a bowl, combine eggs, yolks, sugar and vanilla sugar. Put in a water bath and, with constant stirring, heat the mixture to about 40 degrees. Remove from bath. Beat the warm mixture with a mixer for 8-10 minutes. Add the sifted flour and baking powder to our mixture and gently mix with a spatula until a homogeneous consistency. Add melted butter and mix gently with a spatula. Grease the form with butter, pour in the dough. Bake at 180 degrees for about 30 minutes. Cool the finished biscuit, put it on a wire rack and let it rest for at least 5 hours (preferably overnight). I used a mold with a diameter of 24. It turned out 2 cakes. We bake the same second biscuit, you can add cocoa or lemon zest to it.
Step 2
Cream 1: for cream, whip cold cream, add powdered sugar at the end of whipping (watch the consistency, the mass should be thick and airy). Add curd cheese (Mascarpone or Almette), mix with a spatula or mixer at low speed. Remove the finished cream in the refrigerator until the cake is assembled.
Step 3
Cream 2: defrost strawberries (juice left to save). Mash through a sieve. Discard the cake, put the puree in the cold. Whip the cream to a fluffy persistent foam, adding small cubes of marshmallow (about 0.5 mm). Add strawberry puree to whipped cream with marshmallow, stir. Place in refrigerator until cake is assembled.
Step 4
Each biscuit (of 2) is cut lengthwise into 2 parts. We stack everything on top of each other. From above, lightly draw a wavy Yin Yang line with a knife. Then we go deeper and cut along all the cakes with a long knife. You can soak the cakes, who does not like a dry cake. For one half I used sugar syrup with the addition of canned peach syrup, for the other half I used melted strawberry juice, sugar and lemon juice. We collect the cake: arrange the halves separately vanilla, separately chocolate (or cottage cheese). Collect them by sliding each layer together, soaking and immediately smearing with cream, each side with your own. The upper layers do not need to be lubricated. Having smeared with butter cream, put pieces of peach on top.
Step 5
Decoration: top the whole cake with cream: 200 g of cream cheese, such as Philadelphia (carat, hochland), beat with 50 g of butter and powdered sugar (to taste). I laid out the Yin Yang drawing from a mini meringue of 2 colors. (3 proteins + 150 g sugar). I decorated the sides with colored sugar hearts.
