Meat stuffed cabbage

No matter what anyone says, our cuisine is unthinkable without meat cabbage rolls. Probably, everyone remembers how their grandmother or mother did, and this process resembled a sacred ceremony. Say, the modern housewife has absolutely no time for such delights? We do not agree! Once or twice a year, on weekends, you can definitely find an hour and a half to create this iconic dish. And yet, it should be noted that the process of preparing meat cabbage rolls can become a kind of meditation for each of us, who are always in a hurry and late somewhere. Calmly boil the cabbage leaves. Do not rush to prepare minced meat. Then spread it over the cabbage leaves and carefully wrap it, trying to make the cabbage rolls even and beautiful. Pure creativity, you must agree! And then it remains only to brown the meat cabbage rolls, pour them with sour cream sauce with vegetables and simmer for half an hour - perhaps in the same brazier in which your grandmother cooked.

Ingredients

Servings 4
  • drinking water - 300 ml
  • vegetable oil - 5 tbsp. l.
  • rice - 100 g
  • white cabbage - 1 head (about 1.5 kg)
  • minced beef - 500 g
  • onion - 1 pc.
  • carrots - 2 pcs.
  • sweet pepper - ½ pcs.
  • sugar - 1 tsp. l.
  • sour cream 20% fat - 200 g
  • salt
  • pepper

Cooking

Step 1

Cook rice for meat cabbage rolls. Bring water to a boil in a saucepan. Salt it a little, pour in 1 tbsp. l. oil and add rice. Cook over low heat covered for 10 minutes. Drain on a sieve and let cool.

Step 2

Prepare cabbage leaves for classic cabbage rolls. Clean the head of coarse leaves. Then carefully remove the stalk with a knife. Disassemble the head of cabbage into leaves, trying not to damage them.

Step 3

Bring water to a boil in a 3-4 liter saucepan. Salt. Then dip the cabbage leaves into it in portions and cook for 5 minutes. Place when ready in a large bowl of cold water.

Step 4

Prepare minced meat for meat cabbage rolls. Mix rice with meat, salt and pepper to taste. Put the cabbage leaves on the table and lightly beat off the base of each.

Step 5

Spread the cooked minced meat with rice over the cabbage leaves (about 2 tablespoons each). Roll up the envelopes, turning the edges so that the stuffing does not fall out.

Step 6

In a large frying pan with a diameter of at least 26 cm, heat 2 tbsp. l. vegetable oil. Place cabbage rolls in it and fry on both sides until golden brown. Transfer the cabbage rolls to a saucepan with a volume of at least 3 liters.

Step 7

Prepare the sauce for the meatballs. To do this, peel and chop the onion. Peel the carrots and grate on a medium grater. Finely chop the sweet pepper.

Step 8

Pour the remaining vegetable oil into the pan where the cabbage rolls were fried. Put the vegetables in and brown them while stirring. Add sour cream and sugar. Salt and pepper. Stir.

Step 9

Pour the fried cabbage rolls in the saucepan with the resulting sauce, trying to cover them completely. Close the container and simmer over low heat for 30 minutes over low heat.
