Charlotte with apples and baking powder
Ingredients
Servings 8- category eggs 4 pcs.
- granulated sugar 200 g
- flour in / grade or extra 150 g
- baking powder 5 g
- large apples 5 pcs.
Cooking
Step 1
In a mixer (combine), beat 4 eggs at maximum speed with a pinch of salt until a stable white foam.
Step 2
Add granulated sugar, in a thin stream, without ceasing to beat.
Step 3
Reduce speed to low and add flour with baking powder. The consistency of the dough should be like thick, very thick sour cream. Leave aside for a few minutes for the baking powder to work.
Step 4
Prepare apples: cut into slices and immediately dip in ice water so as not to darken or sprinkle with lemon juice.
Step 5
Turn on the oven at 190-200°C (gas) or 150-160°C (induction).
Step 6
Line a springform pan with confectionery paper, brush with oil. Sprinkle the bottom and sides of the wall with flour, or cookie crumbs, or a white roll dipped in apple or grape juice / white wine, or crushed oatmeal and spread the apples. Apples can be decomposed in 3 ways. The first is a dense layer on top of the crumbs. The second is to mix with the dough and pour over the crumbs. The third (my favorite) is to pour the dough over the crumbs, and place the apple slices beautifully tightly over the dough, slightly sinking.
Step 7
Send to the oven for 30-40-50 minutes, depending on the type of oven and the density of the dough. First 15 min. do not open the oven. The upper part of the product should acquire a characteristic dark shade and be dense: when pressed, the finger should feel elastic. In this case, you're done. Turn off the oven. Leave to cool in the oven for 15-20 minutes.
