This green salad can be served with any meat or poultry as a side dish. It also goes well with boiled potatoes.
Finely chop the cabbage. Cucumbers cut into thin strips. Finely chop the cilantro. Coarsely chop the peanuts.
For dressing, combine butter, lemon juice, sugar, salt, garlic powder, and red pepper in a small bowl.
Place the cabbage, cucumbers and cilantro in a large bowl and pour over the dressing, toss to combine. Sprinkle the salad with peanuts before serving.
