Cut the eggplant into large cubes.
Cut the zucchini into large cubes as well.
Cut the onion into 1 cm cubes
Chop the garlic.
Cut the tomatoes into medium-sized cubes.
Cut the bell pepper into strips or half rings.
Heat vegetable oil in a heavy-bottomed pan and fry the onion and garlic for 5 minutes over medium heat.
Add the minced meat to the pan, mash it into small pieces with a spatula and fry for 5 minutes.
Add tomatoes, zucchini, eggplant, bell pepper and beans to the pan.
Pour in water, add salt to taste, black pepper and dried herbs. Simmer the vegetables under the lid for 20 minutes.
Sprinkle the finished dish with chopped green onions.
