Cut vegetables and mushrooms into cubes and fry in a hot pan, with the addition of Tacos seasoning and Gouda cheese at the end.
Then put all the vegetables in the "pocket" of the tortillas, grated cheddar cheese on top, season with salt, pepper and put in the oven for 3-5 minutes at a temperature of 190 degrees.
Before serving, garnish with cilantro and drizzle with a little olive oil.
