Dust the table with flour. Lay out the dough and roll it out to a thickness of 2-4 mm.
Using a sharp knife, cut the dough into 6 equal pieces: three strips for each braid.
Braid 2 braids: each will need 3 strips of dough. Cover the braids with cling film or a towel and leave to rest for 20-30 minutes.
Meanwhile, finely chop the almonds with a knife.
Grease each braid with yolk.
Line a baking sheet with parchment. Place the braids on the parchment. Sprinkle the braids with sugar, nuts, and cinnamon.
Bake the braids in the oven for 15-20 minutes at 180⁰C until they are golden brown.
