Cut the veal sausage into thin slices, cut each slice into strips. Cut the cherry tomatoes into 4 parts, cut the green onion thinly on the diagonal.
Brush slices of bread with a thin layer of butter on one side and fry on that side. Transfer to a plate.
In the same pan, lightly brown the sausage, transfer to a plate, cover with foil to keep warm.
Lightly beat the eggs with a pinch of salt. Heat the remaining butter in a skillet, pour in the eggs and cook the scrambled eggs. When the eggs begin to set, pour in the cream and cook for another minute. Add fried sausage, stir.
Spread the scrambled sausage on slices of bread, sprinkle with green onions, garnish with cherry tomatoes.
