Prepare the filling. Add onion, garlic, salt, pepper, parsley to the minced meat and mix. Cover with cling film and refrigerate for 10-15 minutes.
Prepare the samsa. Roll the defrosted puff pastry into a tight roll and cut it into circles. Roll each piece into a flat cake. Take the filling out of the refrigerator and spoon it onto the rolled pieces. Wet the edges of the circles with water, this helps to stick them together more easily. Shape the samsa into a triangle. Preheat the oven to 180 degrees. Cover the baking sheet with parchment. Place the samsa on the baking sheet, brush with yolk and sprinkle with sesame seeds. Bake for 30 minutes until golden brown.
