Prepare the filling. Combine the onion with the minced meat, add salt and pepper, and stir. Heat a frying pan with 1 tbsp of vegetable oil and put the minced meat in it. Fry for 3-5 minutes until golden brown, but the meat is not yet ready. Let it cool.
Knead the dough. Dissolve salt in water and sift 1 cup of flour into it. Then continue adding flour, gradually kneading the dough. Form a ball, cover with a towel and leave for 15 minutes.
Form the pies. Cut the dough into small pieces and roll each one out to the size of a small saucer. Put the mince, measuring out about 1 tbsp of filling for each pie. For juiciness, cut the butter into small pieces and add on top of the mince. Take three edges of the dough and bring them to the middle to form a triangle, pinch the edges.
Bake the samsa. Grease the baking tray with the remaining vegetable oil. Beat the egg yolk and grease the top of the pies, sprinkle with sesame seeds and place them on the baking tray. Bake the samsa in an oven preheated to 180 degrees for 30 minutes.
