Place the salmon steaks in a deep baking dish. Season with salt and pepper on all sides. Sprinkle with lemon juice.
Mix the cream and egg yolks in a separate bowl. Add the lemon zest, Dijon mustard and all the herbs. Mix thoroughly. Pour the sauce over the salmon steaks.
Place the pan in the oven and bake for 20 minutes at 200 ℃.
While the fish is baking, make mashed potatoes. Mash the cooked potatoes, add butter. Warm up the milk. Add it to the mashed potatoes and mix.
